Baby and Bananas!

HAI! i'm back! I had a baby! So if you discover my grammer or general language skills suck in this post- I have the baby brain. And FYI this editting never works smoothly for me so today its showing my spaces are all messed up in the preview. cest la vie I guess.

Like I mentioned in my last post (yes I know how long ago that was- for shame) I did say that I am going to hopefully be updating more on account of my maternity leave- Voila! It's a start. Now the hitch is that I find it hard to cook ANYTHING these days so when I get to, its a good day. And if im not too rushed or frazzled to remember to take pictures, thats a greater day. After that I need to then find the time to be hands free and not fall asleep So it takes longer between posts. So hoorah! I'm Blogging right not!



Think of this post as a warm up for what is to come. Even if I fail epically at cooking, I do have definite back log on photos of food i've made and never blogged about.


Today's post is a shout out to a blogger new to the 'hood'. Ky's Kitchen is new and run by my... Common Law Cousin? Cousin Of The Future? Cousin's Girlfriend Kylie. She posted this recipe the other day for Chocolate Banana Bread Muffins. I decided to try it out as I've been meaning to put the banana's in my freezer to good use. They were so yummy and really easy and fast. How yummy and fast? I have a 4 week old- so they must be quick for me to have even managed to get through them in one go- and taste- lets say I made 12 smallish ones yesterday, and there is one left after my husband and I had a day with them. *Shameful*

Kylie's Chocolate Banana Bread Muffins
(Recipe belongs to Ky's Kitchen)





1 cup sugar
1/3 cup butter, soft
3 bananas (ripe)
2 eggs
1 tsp soda, dissolved in 1 Tbsp cold water
2 cups flour
1 tsp baking powder
1/2 tsp vanilla
1/4 tsp cinnamon
1/4 tsp nutmeg
as many chocolate chips as you want!!!



Heat oven to 350
Combine and mix all ingredients together in a large mixing bowl.
Place batter in a greased bread pan (bottom only) or in muffin tins.
Bake 40 to 50 minutes or until wooden pick inserted in center comes out clean.

*I used 1 cup chocolate chips and it was pretty good and chocolate full- next time ill push it to 1.5 cups!. Also, I added a walnut halve to the top of each for fun, and they were just passing very brown at 40 mins. turns out my oven is crazy- they only needed maybe 35 max on my skanky oven.
